An account of the chief changes involved in the chemical breakdown of the main types of foodstuffs during digestion. Shows the secretion of saliva and its action on cooked starch; the gastric glands; secretion of intestinal bile and pancreatic juice and their effect on proteins, carbohydrates and fats; the absorption of nutriment through the villi and lacteals into the blood and its subsequent circulation through the body.
